National Peanut Butter Day

 

Peanut butter is one of those tastes – a little like marmite – that seems to divide the nation. You’re either looking for ways to sneak peanut butter into whatever you’re making - Thai dishes, brownies, the humble PB and J - or, even the thought of that cloying, almost claggy texture has you shouting your distaste from the rooftops! Whether you go crunchy or smooth, on January 24th, we encourage you to pick up your spreading knives and celebrate National Peanut Butter Day.

 

Challenge yourself on this National day and see if you can eat peanut butter in every meal. You could start with the classic peanut butter on toast, perhaps a cheeky peanut butter brownie for a mid-afternoon snack, and a chow mein (which taste 100% more delicious with a spoonful of peanut butter stirred through!) for supper.

 

If you're looking to get back to basics, why not start by making your own peanut butter? You can create your own delicious peanut butter with just three ingredients. Plus, you’re in control of the blitzing so your homemade peanut butter can be as smooth or crunchy as your tastebuds desire.

 

Method:

Heat oven to 200C/180C fan/gas 6. Next, tip 400g peanuts onto a baking tray and roast for 10 minutes. Peanuts have a tendency to catch so keep an eye on them whilst in the oven to avoid that bitter, burnt flavour.

 

Now, pour the nuts into a food processor and add 2 tsp salt. Blitz until you’re happy with the consistency. If you’re after a smoother butter, simply add more (2-3 tsp) peanut oil and continue to blitz. 

 

For supper inspiration, why not try a tasty chow mein? You can substitute the chicken for another protein of your choice.

 

Method:

Heat 1 tbsp oil in a deep-frying pan over a medium heat. Brown 2 diced chicken breasts. Add 100g of your vegetable of choice and continue to fry for another 3-4 minutes. Once the chicken is cooked through, and your vegetables are of the desired consistency, add chow mein sauce and peanut butter. Stir until combined. 

 

Finally, stir through 2 packs of quick cook noodles and continue to fry for 2-3 minutes. Serve and sprinkle with crushed peanuts. Enjoy!
